Here is one of our favorite healthy recipes that my family loves. When my daughter was born 5 years ago, we found out she was allergic to one of the proteins in milk. That was tricky, as I loved cheese and ice cream. Breastfeeding her meant I had to cut out dairy. Thankfully there are alternatives to dairy out there, and they are tasty! Since then, it has been a mission of mine to find recipes that are healthy and dairy free that I can make for her.Dairy-free Mac & Cheese adopted from a combination of dairy-free mac and cheese recipes we have used through the years.
Ingredients:
12 oz uncooked pasta
1 medium sweet potato: peeled and cubed
1 cup raw cashews
1 medium onion: roughly chopped
2 cloves garlic: minced
1 cup plant based milk
2 TBSP olive oil
½ tsp salt
½ tsp turmeric
3 TBSP Nutritional Yeast
½ tsp paprika
Instructions:
-Soak your cashews overnight. Or you can put cashews in a pot of water, bring to a boil, then turn off the heat. Cover the pot and let sit for 10 minutes, then drain the water.
-Prepare pasta according to the package, drain, set aside.
-Boil the onion and sweet potato in water until soft, about 5-10 minutes, drain
-Place all ingredients into a blender and blend until smooth
-Season to taste
-Mix cheese sauce with pasta & enjoy!
